- 6 ripe tomatoes (or 2 cans of whole peeled tomatoes)
- 1 medium onion, chopped

- 1 carrot, peeled and diced

Instructions:
Step 1: Prepare the tomatoes
- If you're using fresh tomatoes, bring a pot of water to a boil. Make small "X" slashes on the bottoms of the tomatoes.
- Place the tomatoes in the boiling water for about 1 minute until the skin begins to peel off. Remove the tomatoes and place them in ice-cold water to stop the cooking process.
- Peel off the skins, then roughly chop the tomatoes. Set aside.
Step 2: Sauté the vegetables
